Sweet Potato and Broccoli Breakfast Bake

This egg dish is a complete breakfast all in one. It's filled with all the good stuff, eggs, sweet potatoes, broccoli, and bacon. Perfect for feeding a group or having breakfast ready all week.

  • 4 to 6 strips bacon
  • 8 oz. sweet potatoes peeled and cubed
  • 8 oz. broccoli chopped into small florets
  • 1/2 cup onion diced
  • 10 eggs
  • 2 tablespoons olive oil
  • salt and pepper to taste


  1. Start by preheating oven to 400 degrees. Place broccoli, sweet potatoes and onions on a baking sheet. Add olive oil, salt and pepper. Toss to combine. Place in oven for 30 minutes or until sweet potato is soft.

  2. Next, cook the bacon to your liking on the stovetop. You can also add it to the cookie sheet to make it easier and clean up faster. Just make sure that you watch it closely so that it doesn't burn. 

  3. While the vegetables are cooking, whisk eggs, add in salt and pepper.

  4. Prepare a baking dish by greasing the sides and bottom.
  5. When the sweet potatoes, broccoli and onion are done baking, add them to the prepared baking dish along with the bacon. Next, pour the eggs into the baking dish.
  6. Reduce the heat in the oven to 375 degrees. Place the baking dish in the oven for 15 to 20 minutes or until the center is no longer giggles.
