If you can’t tell, I love baked egg dishes. I like the convenience of having breakfast already made for a few days, and I know that I’m making a healthy choice. Also, by making this, my husband has something to eat in the morning. He is more than able to make something for himself in the morning but in reality, he won’t cook. By making this on Sunday night, I can ensure we all have good food to eat for a while. The sweet potato adds a sweetness and the broccoli gets crispy on the top plus, there there is bacon how could you go wrong with that? Sometimes making eggs, bacon and potatoes all separately can become a little mundane while on the Paleo diet, but just switching up the way you cook it, it can become more interesting.
