This is my favorite dairy free ice cream recipe and it’s so versatile. It’s made with such simple ingredients, most can be found in your pantry and can also be changed to your dietary needs. This recipe is best with made with an ice cream maker so that it brings in air and makes it more creamy. I use this brand of ice cream maker and I love it. This recipe also calls for peppermint bark as an add in. You can add in your favorite peppermint bark or use my recipe here.
Snowy Peppermint Bark Ice Cream
Non-dairy Peppermint Bark Ice Cream that is perfect for getting you in the holiday mood. It's made with ingredients that you will have in your pantry and really easy to pull together.
- 2 cans full fat coconut milk best if refrigerated over night
- 1 teaspoon vanilla
- 1/2 teaspoon peppermint extract
- 4 tablespoons maple syrup
- 2 pinches of salt
- 1 cup of peppermint bark broken down in to small pieces
In a large bowl, whisk all ingredients (excluding the peppermint bark) until there are no more lumps.
Prepare your ice cream maker according to the manufactures directions.
Pour the coconut milk mixture in to the ice cream maker.
Right before the ice cream is finished churning, add in the peppermint bark.
After the bark is done mixing in, turn off the ice cream maker. I highly recommend serving it right from the ice cream maker, as it is best as a soft serve.
If you want to eat it later, place it in a freezer safe container and store in freezer. If you store it in the freezer remove it 5 minutes before you are wanting to eat it so that it has time to soften.
