The AIP diet can often leave you feeling deprived and like you are missing out on things like bread and baked goods. AIP Zesty Lemon Cookies to the rescue! They are perfect for any time you need a little treat while on the AIP diet. Even people who are not on the diet love them. These cookies are made with gelatin as an egg replacement, it gives the cookies the chewy texture you look for.
AIP Zesty Lemon Cookies
These cookies are zippy and zingy with lemon. They have a bold lemon flavor with a soft inside and a little crisp outside. It is difficult to find an AIP cookie compliant recipe, but I think this comes as close as can be to the real deal.
- 1/2 cup tigernut flower
- 1/4 cup arrowroot powder
- 3 tablespoons coconut flour
- 1/4 cup palm shortening +2 tablespoons
- 1/4 cup palm sugar
- 1/2 teaspoon baking soda
- 1 tablespoon dry gelatin
- 1/8 teaspoon salt
- zest and juice of one lemon
Preheat the oven to 350° and prepare a baking sheet with parchment paper.
Combine tigernut flower, arrowroot powder, coconut flour, palm sugar, baking soda and gelatin in a bowl and mix.
Create a well in the center of the flour mixture and add in the palm shortening and the zest and the juice of the lemon.
Mix until thoroughly combined. This dough will be on the dryer side but it will form together with your hands.
Roll the cookie mixture in between your hands to create small balls, place them on the cookie sheet and press down to make the cookie.
This will create about 10 cookies.
After all the cookies are shaped, place them in to the oven and bake for 8-10 minutes or until slightly golden.
Be sure to let them cool before eating or they will be more likely to crumble.
