AIP Strawberry Ice Cream2

I am diggin’ this AIP Strawberry Orange Zest Ice Cream right now! It’s the perfect sweet treat for the summer time and a great addition to your 4th of July celebration. Fresh berries are in season and are available in abundance at my farmer’s market. I picked some up to make this ice cream and added a little orange zest just to take it to the next level in flavor.

I highly recommend that you use an ice cream maker for this recipe. This is the ice cream maker I use. I received this ice cream maker as a wedding gift and I never thought I would use it. I was wrong and it turned out to be one of my favorite gifts we received. This recipe is fast and easy to make so it’d be a great treat to have the kids help. I topped my ice cream with a little sprig of mint.

I really enjoyed this ice cream! It is simple to make and turned out great. I thought I might want it a little sweeter, but actually 3 tablespoons of maple syrup was just right! I will be making this again for sure. One note for anyone who wants to make this – I churned the ice cream to a thick consistency and then when I added the strawberry mixture it went back to liquid. I got nervous but just kept churning it (as the recipe states!) and it turned out just right! So stay the course – this recipe is great!
