I am diggin’ this AIP Strawberry Orange Zest Ice Cream right now! It’s the perfect sweet treat for the summer time and a great addition to your 4th of July celebration. Fresh berries are in season and are available in abundance at my farmer’s market. I picked some up to make this ice cream and added a little orange zest just to take it to the next level in flavor.
I highly recommend that you use an ice cream maker for this recipe. This is the ice cream maker I use. I received this ice cream maker as a wedding gift and I never thought I would use it. I was wrong and it turned out to be one of my favorite gifts we received. This recipe is fast and easy to make so it’d be a great treat to have the kids help. I topped my ice cream with a little sprig of mint.


AIP Strawberry Orange Zest Ice Cream
This AIP Strawberry Ice Cream is a refreshing treat for the hottest days of summer.
Ingredients
- 1 cup fresh strawberries diced small
- 1/2 teaspoon orange zest
- 1 teaspoon honey
- 1 13.5 oz can full fat coconut milk
- 3 tablespoons maple syrup
- 1 pinch salt
Instructions

Place strawberries, orange zest, honey and a pinch of salt into a saucepan over medium heat for five minutes. the strawberries should cook down and soften but still be intact. Set aside and let cool.

Next, put the coconut milk and maple syrup into a blender and whip until smooth.

Set up your ice cream maker according to the manufactures instructions and pour the coconut milk mixture into the ice cream maker and churn.

About 3 minutes before the ice cream is finished churning, add in the strawberry mixture.

Churn until thoroughly mixed together. Serve immediately or store in a freezer safe container.
