These AIP Mini Herb Chicken Patties have been my saving grace while on the AIP diet. They fit within my diet and anyone will love them even if they are not one the AIP diet. My favorite part about them is that that have very few ingredients but they pack big flavor! These are also great if you meal prep. Make a big batch and keep them on hand for when you are in a pinch. I love that I can make something so easy with ingredients right from my pantry.
Mini Herb Chicken Patties
A quick and flavorful herb chicken patty recipe that can be made with ingredients right from your pantry.
- 1 lb ground chicken
- 1/2 onion diced very fine
- 1/4 cup fresh parsley finely chopped
- 1/2 teaspoon salt
- 1 teaspoon dried basil
- 1 teaspoon granulated garlic
- 1 1/2 teaspoon granulated onion
- 1/2 teaspoon dried oregano
In a large bowl, thoroughly combined all ingredients. Use a spoon to create golf ball size portions. Place aside until all the meat is measured out equally.
Place a pan over med-high heat. Add oil/ fat accordingly for frying. Add chicken to that pan, and press down gently to make a patty form. Don't over crowd the pan. Work in batches if needed. Cook a 3-4 minutes per side.
