Ingredients

For the topping:

  • 1 cup cassava flour
  • 3/4 cup coconut sugar
  • 1/2 cup shredded coconut
  • 1 cup cold coconut oil
  • 1/2 teaspoon cinnamon
  • 2 pinches of salt

For the apples:

  • 6-8 Granny Smith apples peeled, cored and cut in to 1/4 in slices
  • 1 tablespoons lemon juice
  • 2 tablespoons coconut sugar
  • 1 teaspoons cinnamon

Instructions

  1. Preheat oven to 350 degrees. Grease a 9 inch pie pan with coconut oil

  2. Place all of the topping ingredients into a food processor and pulse until the crumble comes together when pinched with fingers, about 30 seconds.

  3. Add all apple ingredients to a large bowl and toss to combine. Place apples in to the prepared pie pan and arrange in to an even layer.

  4. Next, spread the crumble layer evenly on top of the apples.

  5. Bake for 35-40 minutes until apples are soft when pierced with a knife and the topping had crisped.
